Dust off your inner gastronomical adventurer and join us on this delicious immersion tour of Nordic food and beer culture.
Over the last 15 years the concept New Nordic has gained momentum revisiting the roots of Danish food culture and focusing on seasonal local produce. On this study tour we will explore the origins of locally sourced ingredients. We will go sea fishing by the west coast and get our hands dirty pulling the carrots out of the ground ourselves.
Since 2000 the number of Danish breweries has sky rocketed. During the 20 years that have passed since the first local beers hit the shelves of Danish stores a lot has happened. New regional micro-breweries present an innovative variety of beer styles, and on this study tour we will explore the history and art of beer brewing – and even brew a batch ourselves. We will be visiting successful Danish master brewers and explore their equipment as well as the Danish beer scene of today.
In preparation of the tour we will visit a local brewery and the master brewer will help us create a signature beer to bring with us on our tasty tour of Denmark. Here we will be joined by a trained chef who will educate us on the best mix of flavours and ingredients when serving beer with food.
With new insights and inspiration, we are ready to create our own menu with locally based dishes perfectly balanced with our own batch of beer.
