The Meals

At Silkeborg Højskole, we serve six meals a day – and we do it with care.

Breakfast includes homemade sourdough bread, chia porridge, muesli, fruit, traditional Danish øllebrød, eggs, and all the good things that go with a cup of coffee.

Lunch is a warm meal served at the table – with plant-based dishes as the foundation and meat or fish as optional sides.

Dinner is a buffet with hot dishes, salads, homemade rye bread, and small treats.

Snacks appear throughout the day as fresh fruit, homemade baked goods, cake, or other small surprises.

Sustainable Eating at Silkeborg Højskole

At Silkeborg Højskole, sustainability is part of our everyday life – including in the kitchen.
We follow the official Danish dietary guidelines and have significantly reduced our meat consumption over the past few years.
Today, 3–4 of our weekly dinners are vegetarian, and we carefully consider both the quantity and type of meat used in the rest of our meals.
Instead, you'll get plenty of plant-based proteins from legumes and wholesome, flavourful meals full of variety and nourishment.

We hold the Danish organic bronze certification and prioritise local and Danish ingredients when planning our menus.
Our meals are based on what's in season – both to reduce our climate impact and to ensure the best possible taste.

We also make a real effort to reduce food waste.
That means using the whole vegetable – root to leaf – and creatively reusing leftovers in the next day’s dishes.
In this way, we take responsibility without compromising on the joy of good food.

Allergies and Dietary Considerations

We do our best to accommodate your dietary needs – whether they are based on allergies, health considerations, or religious beliefs.
That’s why it’s important that you inform us of any specific dietary requirements when you register – and no later than one month before the course begins.
If you follow a medically prescribed diet, we kindly ask that you send us your dietary plan as well.

Please note that our kitchen is unfortunately not equipped to handle life-threatening allergies – such as severe coeliac disease, which requires complete separation from gluten.

Our meals are primarily plant-based, and we regularly offer vegetarian options.
If you are strictly vegetarian, vegan, or pescetarian, we’d appreciate it if you let us know in advance so we can plan accordingly.
